WAUSAU - People come to Biggby Coffee for their caffeine fix. Co-owner Tom Belongia wants everyone to know his ice cream is the best in the state.
"It's the ice cream your grandma would make if she had a Ph. D in science," said Belongia.
Belongia will be the first person in Wisconsin to sell ice cream made with liquid nitrogen.
"We've searched and searched and searched and no one else is making liquid nitrogen ice cream," said Belongia.
He heard about another Biggby Coffee franchise successfully doing it and thought the dairy state would be a great fit.
"The ice cream is made from fresh products, no preservatives, and no additives," said Belongia.
Belongia only needs fresh, real ingredients because his ice cream is made to order.
"It's a pretty simple process," said Belongia. "We're going to take our 12 percent milkfat milk and we're going to add Ghirardelli chocolate to it and blend that all up."
While it's being blended, Belongia fills a jug with liquid nitrogen and adds it to the mixing bowl.
"As you see the smoke this is actually the air boiling off the liquid nitrogen," said Belongia.
Next it's time to scoop up and serve. Ingredients turn to ice cream in less than a minute. Belongia said its and quick and tasty.
"It just makes it a richer more delicious ice cream," said Belongia. "Everyone in Wisconsin likes ice cream and we're the dairy state so we should have the best ice cream out of anywhere."
Belongia will be training his employees Thursday, with a grand opening Friday at noon.
