Savory Rhubarb Sauce
3 tablespoons butter
4 stalks rhubarb, diced fine
3 garlic cloves garlic, diced fine
1 jalapeno pepper, seeded, membrane removed, diced fine
3 green onions, diced fine
1/4 cup honey
1/3 cup water
salt and pepper to taste
In a heavy bottomed skillet over medium low heat, melt butter add in the rhubarb, minced garlic, jalapeno pepper to the pan and saute until the rhubarb is very soft 4-5 minutes, add in the green onions and saute a minute or two more. stir in the honey, water, salt and pepper.
Allow the sauce to cook down to the desired consistency. If a spicier sauce is desired leave the seeds and membrane in the jalapeno pepper and add a sprinkle of red pepper flakes along with the salt and pepper.
This sauce is amazing over broiled fish fillets, tuna steaks or grilled chicken
