Print Recipe Buffy's Northwoods Kitchen: Streusel Topped Blueberry Muffins

Streusel Topping:
1/3 cup sugar
1 teaspoon cinnamon
1/3 cup flour
1/4 cup cold butter cut into cubes
Combine the dry ingredients into a small bowl and using a fork, cut in the butter until the mixture resembles coarse crumbs. Set aside

Muffin Batter:
2 cups AP flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup white sugar
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/2 cup plain yogurt
2 eggs
2 teaspoons vanilla
1/2 cup milk
2 cups blueberries tossed with 2 tablespoons of flour

Preheat oven to 400*F. Combine all the dry ingredients, mixing until well combined. In another bowl combine the yogurt, eggs, vanilla, and milk, mixing well to combine. Add the wet mixture to the dry and mix gently until just combined. Gently fold in the blueberries. (If using frozen blueberries, DO NOT thaw them before tossing in the flour and adding to the mixture. The berries will bleed into the batter and you will end up with tough, weird colored muffins.)

Scoop the mix into muffin cups, filling 2/3's full, that have been sprayed with cooking spray or have baking papers in them. Top with a heaping spoonful of streusel topping and bake at 400*F for 20-25 minutes or until tops are golden brown and a pick inserted comes out clean.

Yield 12-16 muffins.
