Juicy Lucy
2 pounds ground chuck (I like 85/15)
1 teaspoon salt
1 1/2 teaspoon garlic powder
1/2 teaspoon Worcestershire sauce
1/2 teaspoon pepper
4 ounces of a good melting cheese, cut into 16 cubes (American, Muenster, and mozzarella) Muenster is my choice
Mix the meat and seasonings, until just combined. Over mixing the meat will make a tough burger. Divide the meat into 8 balls and then press into 8 thin patties, making 4 slightly larger in diameter. Place 4 cheese cubes onto the 4 bigger patties, more toward the center of the burger. Top with the slightly smaller patties sealing the edges. Grill or cook over medium high heat 4-5 minutes per side. Turning one time and handling as little as possible. Cook till the center reads 150-160*F on an instant read thermometer. Remove to a plate and lightly tent the burger patties with foil and allow to sit for 5 minutes, to allow the cheese center to cool a bit and allow the juices to redistribute in the burgers. Place on a toasted bun and enjoy!!!
