Brunch Cups
6 croissants cut into 1" cubes
8 ounces of ham, bacon, or breakfast sausage ( if using, bacon or breakfast sausage, cook thoroughly and crumble into small pieces)
4 eggs
2 cups of half and half
1 tablespoon dry mustard
1 1/2 cups broccoli florets broken up into small pieces
1 1/2 cups shredded cheese of your choice
4 green onions, sliced fine
Preheat oven to 350*F Spread the croissant cubes onto a baking sheet and bake for 10 minutes until, lightly toasted and slightly dry.
Remove from the oven and dump into a large mixing bowl. In another bowl, crack in the 4 eggs and half and half and whisk well to combine, then add to the croissant cubes. Add the remaining ingredients mixing well, so everything is well combined. Place the mixture into 12 regular size muffin cups that have been greased or sprayed with cooking spray, using a large spoon or scoop.
Place in the oven and bake for 30-35 minutes or until the tops are golden brown and spring back when poked. Remove from the oven and let stand for 5 minutes before removing from the muffin cups using a table knife to loosen them.
Serve hot. Refrigerate any leftovers
