Cookie Crust:
3/4 cup softened butter
1 cup sugar, divided
1 egg
1/4 cup molasses
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground ginger
2 1/4 cups flour
Preheat oven to 325F
Combine butter and sugar in mixing bowl and mix on medium speed until
fluffy and well combined. Roughly 2 minutes. Add in the egg, molasses,
vanilla, baking soda, salt, cinnamon, and ginger. Mix on medium speed
until well mixed, stopping a few times to scrape down the sides of the
bowl as needed. Add in the flour on low speed. Mix until just
combined. Press dough into a circle on a 16" pizza pan staying about an
inch away from the edge (the cookie crust will spread as it bakes) or
into 2 (8 or 9 inch) round cake pans that have been sprayed with baking
spray or has parchment on the bottom. If desired, sprinkle the top
with sugar. Bake at 325F for 18-20 minutes or until barely set.
This recipe is a fantastic molasses cookie recipe. Form the dough into
2" balls roll in sugar, place on parchment lined baking sheet and bake
at 350*F for 9-10 minutes or until the edges are set. Cool on baking
sheet 1 minute then remove from pan to finish cooling on a wire rack.
Yields about 24 cookies
Caramel Sauce:
1 cup brown sugar
1 stick (1/2 cup) butter
1/4 cup half and half
1 teaspoon vanilla
Combine the brown sugar, butter and half and half in a small heavy
bottomed sauce pan and heat over low heat until melted and bubbly,
stirring often. Remove from heat and stir in vanilla. Allow to cool a
bit or if preferred, refrigerate and use cold for a thicker sauce.
2-3 cored apples, chopped into small cubes
To assemble the pizza, spread the cooled cookie crust with cool caramel
sauce, top with apple bites and chopped toasted nuts. If desired you can
add craisins, raisins, white chocolate chips to the Pizza. Cut into
pieces and serve.
