1 1/2 cups AP flour
2 Tablespoons sugar
1 teaspoon baking soda
2 teaspoons baking powder
pinch salt
1 cup milk
1 teaspoon vanilla
2 eggs
1/4 cup vegetable oil
1 cup shredded apples (1-2 apples, that have been peeled cored and shredded with a grater)
1/2 finely chopped nuts
Combine the dry ingredients in a bowl, mixing well to distribute the leavening agents. In another bowl combine all the wet ingredients stirring well to combine everything. Add the wet ingredients to the dry, stirring just to barely combine. Stir in the shredded apple and the nuts, mixing lightly.
Cook on a hot well-greased skillet or griddle, flipping only once when the pancake is dry and bubbles burst. Cook on the second only 1 minute or so, just to brown.
