2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 cup applesauce (either white or pink applesauce is just fine as long as it is unsweetened)
1/2 cup butter, melted and cooled slightly
Additional melted butter and cinnamon sugar for finishing
Preheat oven to 375*F
Combine all the ingredients together in a mixing bowl and stir together until mixed, but still lumpy.
At this time if you like you can stir in 1/2 cup chopped nuts, or raisins, mini chocolate chips or my favorite cinnamon chips.
If you adding any additional mix ins, add 1 more egg to the mix.
Without the extra egg the muffins tend to be dry and crumbly.
Once the mixture is combined, scoop the batter into 12 muffin cups that have been sprayed with baking spray, or use muffin papers.
Bake at 375*F for 18-20 or until the top springs back when poked.
Allow to cool a few minutes. If desired dip the tops of the muffins into melted butter and roll the tops in cinnamon sugar.
I use 1/2 cup cinnamon to roughly 1/2 teaspoon cinnamon.
Allow to cool a few more minutes, then dive in. Store in a covered container
Yields aprox 1 dozen muffins
