Pasta ala Caprese'
12-16 ounces of hot pasta, cooked according to package directions
1: 8 ounce ball of fresh mozzarella cheese, cut in cubes
1: pint of tomatoes sliced in half (In summer when tomatoes are in season,any size and variety of tomato is great. In winter when tomatoes aren't in season grape tomatoes are your best bet.)
5-6 leaves fresh basil, rough chopped or torn
3 Tablespoons extra virgin olive oil
3-4 Tablespoons balsamic vinegar
salt and pepper to taste
Cook pasta per package directions.
In a large bowl add together the olive oil,balsamic vinegar, salt and pepper, whisking to combine, add in the sliced tomatoes and basil stirring to mix.
Add in the hot cooked pasta, and toss to coat.
Gently stir in the cubes of fresh mozzarella, toss gently to mix throughout the pasta. The cheese will soften quite a bit, but will not melt.
Yield: 6 side servings 4 entree servings
If desired sliced cook chicken can be added to the salad as well.
