Quick and Easy Guinness Baileys filled Cupcakes
1 Devil's Food Cake Mix (any brand)
1 Cup Guinness Stout or another dark beer
Prepare the cake mix according to the package directions, except substitute 1 cup Stout for the water in the mix. Divide the batter equally between cupcake pans. You will get roughly 24 cupcakes. Set Aside.
In another bowl place 1/4 cup sugar, 1 (8 oz) block cream cheese and 1/4 Baileys Irish Creme Liqueur mixing until light and well combined.
Using a tablespoon or a small cookie scoop put a scoop of the cream cheese mixture into the center of each cupcake batter. Bake the cupcakes according to package directions. You don't need to change the baking time because of the filling. When done remove from the oven and allow to cool. Once completely cool frost as desired.
Chocolate Cream Cheese Icing
1 (8 oz) block Cream Cheese
1/4 cup butter
1 teaspoon vanilla
2 ounces bittersweet baking chocolate, melted and cooled
3-3 1/2 cups powdered sugar
Cream together the cream cheese and butter when well combined add in the vanilla and melted chocolate mix well scraping down the sides of the bowl. Gently add in the powdered sugar until desired consistency is reached.
Frost the completely cooled cupcakes with the frosting and decorate as desired. Any leftover frosting can be stored in an airtight container in the frig for up to 3 weeks
