Cookie Bars

Bar Base:
1 box yellow cake mix
1/3 cup very soft butter
1 egg
Mix all ingredients together and mix together well. The mixture will seem kind of crumbly. That's OK
Press into the bottom of a sprayed 9X13 pan or the the bottom of an 11X15 jelly roll pan. To make it easier to cut the bars later I line the pan with foil and then spray the foil.

Trifecta bars:
Cover the bar base in the pan with 2 cups white chocolate chips, l cup craisins, and 11/2 cups finely chopped nuts. Press the add ons into the dough so they bake into the base. Bake at 350*F for 18-22 minutes or until the crust is a rich golden brown around the edges. Allow to cool 10-15 minutes before cutting into bars. This will give you 24-36 bars depending on the size of the pan

Salted caramel cashew bars:
Press the base into a prepared pan and bake at 350*F 17-20 minutes or until puffy and deep golden brown around the edges. While the base is baking melt over low heat in a heavy bottomed pan 1 bag of milk maid caramels with 3 Tablespoons of 1/2 and 1/2 or heavy cream. Stirring constantly, until completely melted and smooth. I don't have great luck melting caramels in the microwave, if you can make it work, go with whatever you prefer. Chop into rough pieces 1cup of dry roasted cashews. When the bar base comes out of the oven immediately sprinkle with the chopped cashews and then pour the melted caramel over. Let sit for 10 or so minutes then if desired sprinkle with coarse sea salt. Dark chocolate chips sprinkled over the caramel is also a nice touch. Let sit atleast one hour before cutting into bars

Streusel Jam Bars:
Reserve 1 cup of the bar base and set aside. Press the remaining base into a prepared pan. Bake at 350*F for 10-12 minutes or until just turning golden brown. Meanwhile, combine the reserved base with 1/2 cup finely chopped nuts or if you prefer 1/2 cup of oatmeal. Set aside. In the microwave, heat 2 cups of jam or jelly of your choice until it is almost liquid and very easy to spread. (1-1 1/2 mins. stirring every 30 seconds) Remove the partially baked base from the oven and VERY carefully spread the top with the heated jam. The base is rather delicate so don't press down to hard. Top the jam with the reserved streusel topping and return to the oven for another 8-10 minutes or until the streusel is browned and the jam is bubbly. Let cool for at least 1 hour before cutting into bars

Nutella Coconut Bars:
Press the bar base into a prepared pan and bake at 350*F for 10-12 minutes or until just starting to turn light golden brown. Remove from the oven and spread with 1 1/2-2 cups of Nutella that has been heated in the microwave along with 1 tablespoon of milk for 1 1/2-2 minutes, stirring every 30 seconds or until it is almost runny. Use a very light touch when spreading the nutella so as not to tear the soft bar base. Sprinkle 1 cup flaked coconut over the nutella and using a spatula gently pat the coconut so it sticks to the nutella. Return to the oven for another 7-9 minutes or just until the coconut starts to brown. Cool for 10-15 minutes before cutting into bars
