Summer Coolers

Lime Infused Simple Syrup
1 cup water
1 cup sugar
2 strips of lime peel (use a vegetable peeler to get the green part and leave the white part)
Heat all ingredients in a sauce pan until the sugar is completely dissolved in the water. Allow to cool completely, remove the lime peel and place in a covered container to store. This will last a week or so if kept refrigerated.
Any citrus peel may be used to flavor the simple syrup.


Black Berry Puree
Wash 2 cartons of fresh blackberries. Place in a blender jar along with 1/3 cup water and puree until smooth. To remove the seeds from the puree pour the blackberry puree into a wire mesh sieve that has been placed over a bowl and push the puree through the sieve with a spatula. The mixture will be very thick. That's what you want. Pour into a covered container. This will yield slightly less than 2 cups of puree. Store in the frig for up to 4 days.


Mango Puree
Peel and cube 2 very ripe mangoes. Place in a blender jar along with 1/4 cup of water. Puree until smooth. Pour into a covered container. This will yield right around 2 cups of puree. Store in the frig for up to 4 days.


Peach Puree
Peel and pit 4-5 very ripe peaches. Place in a blender jar along with 1/4 cup of water and puree until smooth. Pour into a covered container. This will yield 2 cups of puree. It's best to use this puree as soon as possible because the puree will discolor slightly after just a day or two.


Strawberry Puree. Wash and stem 1 pound of strawberries. Place in a blender jar along with 1/3 cup of water and puree until smooth. Pour into a covered container. Store in the frig for up to 4 days. This will yield around 3 cups of puree.


To make the cocktails, fill a cocktail shaker with ice and add 1-2 ounces of rum or vodka or tequila, 1-2 ounces of flavored simple syrup, 1-2 ounces of fruit puree and 1-2 ounces of seltzer, or flavored seltzer water, or lemon lime soda. Cover the shaker and shake vigorously. Pour into a glass and serve.
To make any of the coolers non alcoholic, simply eliminate the liquor from the recipe and add 1-2 extra ounces of seltzer.
Any combination of the purees also makes a tasty cooler :)
If you do not have a shaker, the drinks can be made in a large glass simply by stirring vigorously till everything is well combined.


To make a pitcher of the coolers simply multiply the recipe by 4 and stir vigorously with a long spoon.
