Lemon Bars

1 lb. Butter
1 cup Sugar
4 cups Flour
1/4 tsp. Salt

10 each Eggs, medium
4 cups Sugar
1 T Lemon Extract
1 cup Lemon juice
1 cup Flour

Confectioners' sugar, for dusting

Add all crust ingredients to the bowl of a mixer.
Mix until crumbly.
Press into 13/18 cake pan.
Bake at 350 for 10-12 minutes or until lightly browned.
Meanwhile, use mixer to combine all filling ingredients.
Pour filling ingredients onto warm browned crust.
Reduce oven to 325, return to the oven and bake until filling is set, about 15 minutes.
Cool, then cut into 40 bars (8x5)
Serve 1 bar per person.
