National Grilled Cheese Month: Broccoli & Wisconsin Cheddar Grilled Cheese


Ingredients:

8 slices sourdough or French bread
4 tablespoons butter, softened
1 1/2 cups broccoli flowerettes, finely chopped
4 ounces cream cheese, softened
3 to 4 tablespoons sweet onion, diced
1/4 teaspoon garlic powder
pinch of salt and pepper
2 cups (8 ounces) Wisconsin cheddar cheese, shredded
Cooking Directions:

Spread each slice of bread on one side with butter.

In small bowl, mix broccoli, cream cheese, onion, garlic powder, salt and pepper until combined. Place 4 slices bread on clean, flat surface, buttered-side-down. Spread an even layer of broccoli-cream cheese mixture on each slice; top with shredded cheddar. Top with second slice of bread, buttered-side-up. Press sandwich together.

Heat large nonstick skillet over medium-low heat. Grill sandwiches on both sides until golden brown, about 4 to 6 minutes per side. Remove from heat and let rest about 2 minutes.

Cut in half and serve immediately.
