Buffy's Quick Pickled Onion

Quick Pickled Onions

1 teaspoon salt
1/3 cup sugar
1 cup cider vinegar
1 Tablespoon Pickling Spice
1-2 teaspoons dill weed or 1 Tablepoon fresh dill
2 red onions peeled, halved and sliced very thin

Combine all the ingredients except the onions in a small saucepan and heat to boiling. Pour hot brine mixture
over thinly sliced onions and allow to sit for at least 20 minutes before serving.
