Buffy's Philly Cheese Wit' Onions Hot Dog

Philly Cheese Sauce wit' Onions
2 Tablespoons Butter
2 Tablespoons Olive oil
2 onions quartered and thinly sliced
3 Tablespoons flour
1 to 1/2 cups milk
2 cups shredded cheddar cheese

Heat Butter and Olive oil over med low heat in a saucepan. Add onions and saute until soft and translucent (7-10 minutes) Stir flour into the onion mixture stirring often. Cook a few minutes to allow the flour and butter/oil mixture to combine and flour to cook out. Slowly stir milk into the onion flour mixture, stirring constantly to avoid any lumps. When mixture is well combined, add the cheese in 2-3 steps stirring until cheese is melted.

If mixture is to thick stir in more milk, if mixture is to thin, allow mixture to cook a few minutes more until desired thickness.

Spread over bun and enjoy!
