Mother's Day Maple Nut Muffins

2 cups all purpose flour
3/4 pure Maple syrup
1/2 cup (1 stick) butter, melted
1 Tablespoon baking powder
1/2 teaspoon salt
2 eggs
1/4 cup sour cream
1/2 to 3/4 cup milk
1/2 cup chopped nuts
1/4 cup rolled oats
1/4 cup ground flaxseed meal

Preheat oven to 375*F. In a big bowl combine all the ingredients and stir until thick and combined. Lumps are fine, don't over mix the batter. If it seems dry add more milk, a few splashes at a time. Fill paper lined muffin cups 2/3's full and bake for 20-25 minutes or until golden brown and springy when touched. If you poke with a skewer it should come out clean. This will yield roughly 18 muffins. Store loosely covered.
The maple flavor will not be overpowering. For a stronger maple flavor use grade B syrup.
