Fruit and Nut Muffins

1 cup whole wheat pastry flour
1/4 cup soy flour
1/3 cup sugar/Stevia blend
1/4 cup flax seed, ground
1/4 tsp salt
1 tsp baking soda
1/2 teaspoon cinnamon
2 large eggs, beaten
1 cup lowfat Greek yogurt, plain
1 tsp vanilla
1/3 cup light olive oil
1/2 cup chopped dried fruit, raisins or low sugar craisins
1/2 cup finely chopped walnuts

-Preheat oven to 350°F. Grease a muffin tin with light olive oil.
-Mix dry ingredients in a large bowl. Combine wet ingredients (yogurt, vanilla and oil) and stir into dry ingredients just until moistened. Batter should be lumpy and fairly thick. Stir in fruit and nuts.
-Fill prepared muffin tin 2/3 full. Bake for about 18 minutes or until a toothpick stuck into the center comes out clean.

The soy flour and Greek yogurt adds extra protein and will keep you full and satisfied!

Makes 12 muffins.
